Pecan Cranberry Brie
Ingredients
Cranberry Orange Sauce Ingredients
1 (12 oz.) pkg. cranberries
1 1/3 cup sugar
1 tbsp. finely shredded orange peel
¼ cup water
2 tbsp. lemon juice
¼ cup orange juice (Cointreau may be substituted)
Pecan Brie Ingredients
One 15 oz. round brie
3/4 cup Newberry Pecans, chopped
½ cup cooled Cranberry Orange Sauce (see recipe below)
unsalted crackers
Directions
Cranberry Orange Sauce Directions
In large saucepan, combine cranberries, sugar, orange peel, water, and lemon juice; mix well.
Cook over medium-low heat until juices start to flow and sugar is dissolved.
Stir frequently.
Increase heat to medium; simmer an additional 6 to 8 minutes or until cranberries pop, stirring occasionally.
Stir in orange juice (or Cointreau!).
Refrigerate one hour or until completely cooled.
Pecan Brie Directions
Spread pecans in a 9-inch pie platter.
Microwave on HIGH, 4 to 6 minutes.
Stir every 2 minutes.
Remove rind from top of Brie, if desired.
Pour Cranberry Orange Sauce over Brie; microwave on HIGH for 2 minutes.
Turn dish after 1 minute.
Top with chopped Newberry Pecans
Serve warm with crackers.
